Preparation
- Preheat oven to 350°F (175°C).
- Make the crust: Mix graham cracker crumbs and melted butter until the mixture holds together when pressed. Press into bottom and up the sides of a 9-inch pie pan.
- Whisk the filling: In a medium bowl, whisk sweetened condensed milk, sour cream, key lime juice, regular lime juice, and lime zest until smooth and uniform.
- Pour the filling into the prepared crust. Smooth the top with a spatula.
Baking
- Bake for 10 to 12 minutes, then let cool to room temperature.
- Refrigerate for at least 3 hours before serving.
Serving
- Top with whipped cream before slicing. Serve chilled.
Notes
Cover tightly and refrigerate for 3–4 days. For best flavor, chill overnight. Can freeze slices for up to 1 month.
