Ingredients
  

For the cheesecake filling
  • 8 oz cream cheese, softened
  • 1/4 cup sugar
  • 1/2 tsp vanilla extract
  • 1 large egg yolk
For the cookies
  • 1 cup chocolate chip cookie dough Use chilled for easier handling.
  • 1/2 cup chocolate chips For topping.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine cream cheese, sugar, vanilla extract, and egg yolk until smooth to make the cheesecake filling.
  3. Scoop a small amount of chocolate chip cookie dough and flatten it in your palm.
  4. Place a teaspoon of the cheesecake filling in the center and wrap the cookie dough around it, sealing the edges.
  5. Roll into a ball and place on a baking sheet lined with parchment paper.
  6. Repeat for all cookie dough.
  7. Top each cookie with a few chocolate chips.
Baking
  1. Bake for 10-12 minutes or until the edges are golden.
  2. Let cool before serving.

Notes

Cool cookies completely before storing. For best results, store in an airtight container in the fridge for up to 4 days, or freeze for up to 1 month. Let them cool 5–10 minutes after baking so the filling holds together.
