  • 1 lb Italian sausage
  • 2 cans white beans Drain and rinse if canned
  • 1 medium onion, chopped
  • 1 medium carrot, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth Use good quality broth for better taste
  • 2 cups spinach, fresh
  • 2 tbsp olive oil For sautéing
  • 1 tbsp dried herbs (oregano and thyme)
  • to taste salt Add at the end to avoid over-salting
  • to taste pepper

Method
 

Preparation and Cooking
  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onion, carrot, and celery; sauté until softened.
  3. Add minced garlic and Italian sausage, cooking until the sausage is browned.
  4. Stir in the white beans, broth, dried herbs, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Add fresh spinach and cook until wilted.
  7. Adjust seasoning as needed and serve warm.

Notes

Serve hot with a drizzle of olive oil, fresh bread, or garlic toast. Store leftover soup in airtight containers in the fridge for up to 4 days or freeze for up to 3 months.
