Ingredients
  

Base Ingredients
  • 4 cups Mixed greens (lettuce mix, arugula, spinach, or baby greens) Choose vibrant and fresh greens.
  • 1 cup Fresh herbs (basil, parsley, or a mix) Herbs should smell bright and not wilted.
  • 1 cup Blackberries Select plump and shiny berries.
  • 1 cup Cottage cheese Use a mild-tasting fresh tub.
Dressing
  • 3 tablespoons Olive oil Extra virgin is preferred.
  • 1 tablespoon Vinegar (balsamic or a mild red wine vinegar) Use a quality vinegar for best flavor.
  • 1 pinch Salt Adjust to taste.
  • 1 few grinds Pepper Freshly ground is best.
Optional Add-ins
  • 1/4 cup Nuts (walnuts, almonds) Lightly toasted for more flavor.
  • 1/4 cup Seeds (pumpkin, sunflower) Optional for crunch.
  • 1 cup Other fruits (sliced strawberries, apple slices) Feel free to swap based on preference.

Method
 

Preparation
  1. Rinse the mixed greens and fresh herbs in cold water and spin or pat them dry.
  2. In a large bowl, combine the washed greens and herbs.
  3. Add the blackberries and spoon clusters of cottage cheese over the top.
Making the Dressing
  1. In a small bowl, whisk together the olive oil, vinegar, salt, and pepper until glossy.
Tossing the Salad
  1. Drizzle the dressing over the salad and gently toss to combine, being careful not to crush the berries.
Serving
  1. Top with optional nuts or seeds if desired, and serve immediately.

Notes

Keep the components separate until just before serving to retain freshness. Use whole berries for pops of flavor and avoid mushiness.
