  • 8 large Eggs Fresh eggs are preferred.
  • 2 cups Cheddar cheese, shredded Can substitute with Monterey Jack or Pepper Jack cheese.
  • 1 cup Milk Whole milk or low-fat options work.
  • 1 large Onion, diced Sautéed with peppers.
  • 2 large Bell peppers, diced Use any color of your choice.
  • 1 cup Sour cream, for serving Optional for serving.
  • 1 cup Salsa, for serving Optional for serving.

Method
 

Preparation
  1. Cook the spicy sausage in a skillet until browned, breaking it up into small pieces as it cooks.
  2. Dice the onion and bell peppers, then sauté them in the same skillet until softened.
  3. Shred the cheddar cheese and set aside for later use.
Assembling the Casserole
  1. In a large bowl, whisk together the eggs, milk, salt, and pepper.
  2. Add the cooked sausage, sautéed onions, bell peppers, and shredded cheese to the egg mixture.
  3. Stir until everything is well combined.
Baking
  1. Pour the egg mixture into a greased 9x13-inch baking dish.
  2. Bake at 350°F for 35-40 minutes. The eggs should be set and the top golden brown.
  3. Check after 30 minutes and rotate if needed. Continue baking until done.

Notes

For optional spicy elements, consider adding diced jalapeños or serrano peppers. You can customize the casserole by adding beans or different types of cheese as desired.
