Prepare Ingredients
- Heat a large pot over medium heat. Add the ground beef or turkey and chopped onion.
Brown Meat and Onion
- Cook until the meat is no longer pink and the onions are translucent.
- Drain any excess fat.
Add Remaining Ingredients
- Stir in black beans, kidney beans, corn, diced tomatoes with green chilies, tomato sauce, taco seasoning, and broth.
Simmer
- Bring to a boil then reduce to a gentle simmer for about 30 minutes.
Season and Serve
- Taste and season with salt and pepper as desired.
- Ladle into bowls and top with desired toppings.
Notes
For a vegetarian option, replace the meat with an extra can of beans and use vegetable broth. Add a squeeze of lime or a tablespoon of vinegar for a flavor boost.
