  • 1 can (15 oz) kidney beans, drained and rinsed Same as above for rinsing.
  • 1 can (15 oz) corn, drained For a low-carb variant, skip the corn.
  • 1 can (10 oz) diced tomatoes with green chilies Adds mild heat and flavor.
  • 1 can (15 oz) tomato sauce Provides a rich flavor base.
  • 1 packet taco seasoning Adjust for personal spice preference.
  • 2 cups beef or chicken broth Opt for low-sodium if monitoring salt.
  • to taste salt and pepper Adjust seasoning to personal preference.

Method
 

Prepare Ingredients
  1. Heat a large pot over medium heat. Add the ground beef or turkey and chopped onion.
Brown Meat and Onion
  1. Cook until the meat is no longer pink and the onions are translucent.
  2. Drain any excess fat.
Add Remaining Ingredients
  1. Stir in black beans, kidney beans, corn, diced tomatoes with green chilies, tomato sauce, taco seasoning, and broth.
Simmer
  1. Bring to a boil then reduce to a gentle simmer for about 30 minutes.
Season and Serve
  1. Taste and season with salt and pepper as desired.
  2. Ladle into bowls and top with desired toppings.

Notes

For a vegetarian option, replace the meat with an extra can of beans and use vegetable broth. Add a squeeze of lime or a tablespoon of vinegar for a flavor boost.
