Preparation
- Preheat the oven to 375°F (190°C).
- Wash and peel the sweet potatoes, then cut them into small cubes.
- Put the sweet potatoes on a baking sheet, drizzle with olive oil, and add salt and pepper.
- Roast for 20-25 minutes, until soft.
Cooking
- While the sweet potatoes roast, cook sausage or bacon in a skillet over medium heat until browned.
- Drain excess fat.
- In a bowl, mix the roasted sweet potatoes with cooked sausage, eggs, and cheese.
- Transfer the mixture to a greased 9x13-inch baking dish.
- Bake for 35-40 minutes until the eggs are set and the top is golden.
