  • 4 large sweet potatoes Orange-fleshed varieties like Beauregard or Jewel are ideal.
  • 1 lb sausage or vegetarian sausage Cooked until browned.
  • 6 large eggs For protein and richness.
  • 1 cup cheese Cheddar or mozzarella for flavor.
  • 2 tbsp olive oil For roasting sweet potatoes.
  • 1 tsp salt To taste.
  • 1 tsp pepper To taste.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Wash and peel the sweet potatoes, then cut them into small cubes.
  3. Put the sweet potatoes on a baking sheet, drizzle with olive oil, and add salt and pepper.
  4. Roast for 20-25 minutes, until soft.
Cooking
  1. While the sweet potatoes roast, cook sausage or bacon in a skillet over medium heat until browned.
  2. Drain excess fat.
  3. In a bowl, mix the roasted sweet potatoes with cooked sausage, eggs, and cheese.
  4. Transfer the mixture to a greased 9x13-inch baking dish.
  5. Bake for 35-40 minutes until the eggs are set and the top is golden.
