Ingredients
  

For the Cake
  • 2 medium Granny Smith apples Peeled and sliced
  • 3 pcs Eggs Room temperature
  • 1.5 tsp Baking powder
  • 0.5 tsp Baking soda
  • 1.33 cup Brown sugar Light packed
  • 1 tsp Cinnamon
  • 2.75 cups Flour
  • 1.5 cup Granulated sugar
  • 0.75 tsp Salt
  • 2 tsp Vanilla extract
  • 1 cup Pecans Chopped, for topping
  • 2 tbsp Apple cider
  • 1.125 cup Butter Unsalted, room temperature
  • 1 cup Sour cream

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a baking pan.
  2. Peel and slice the Granny Smith apples and set aside.
  3. In a bowl, whisk together the eggs, brown sugar, granulated sugar, vanilla extract, and apple cider until smooth.
  4. In another bowl, mix the dry ingredients: flour, baking powder, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the sour cream, butter, and diced apples until evenly distributed.
  7. Pour the batter into the prepared pan.
  8. In a small bowl, combine the pecans with a little brown sugar and sprinkle over the top of the batter.
Baking
  1. Bake for 40-50 minutes or until a toothpick comes out clean.
  2. Let it cool before serving.

Notes

Serve warm or at room temperature. Add a scoop of vanilla ice cream or a dollop of whipped cream for a sweeter dessert. Store wrap in plastic wrap or airtight container for up to 2 days at room temperature or refrigerate for 5 days.
