Preparation
- Preheat the oven to 350°F (175°C). Grease a baking pan.
- Peel and slice the Granny Smith apples and set aside.
- In a bowl, whisk together the eggs, brown sugar, granulated sugar, vanilla extract, and apple cider until smooth.
- In another bowl, mix the dry ingredients: flour, baking powder, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the sour cream, butter, and diced apples until evenly distributed.
- Pour the batter into the prepared pan.
- In a small bowl, combine the pecans with a little brown sugar and sprinkle over the top of the batter.
Baking
- Bake for 40-50 minutes or until a toothpick comes out clean.
- Let it cool before serving.
Notes
Serve warm or at room temperature. Add a scoop of vanilla ice cream or a dollop of whipped cream for a sweeter dessert. Store wrap in plastic wrap or airtight container for up to 2 days at room temperature or refrigerate for 5 days.
