Method
Make the Strawberry Syrup
- Combine chopped strawberries, sugar, and a splash of water in a small saucepan.
- Cook over medium heat until the fruit breaks down and the mixture thickens, about 6–8 minutes.
- Strain to remove seeds if a smooth syrup is desired.
Chill the Syrup
- Cool the syrup to room temperature, then refrigerate until chilled.
Assemble the Drink
- Add 2–3 tablespoons of chilled syrup to a tall glass.
- Add ice if desired and pour 1 cup of chilled sparkling water over the syrup.
Stir and Add Cream
- Gently stir with a long spoon for 2–3 turns and add cream if using.
Top and Serve
- Top with a dollop of whipped cream and garnish with a sliced strawberry.
Notes
For a creamier texture, add a splash of heavy cream or half-and-half. Use chilled components to keep fizz longer. Assemble just before serving for best results.
