Ingredients
  

For the Strawberry Syrup
  • 1 cup chopped strawberries Pick ripe, fragrant strawberries for the best flavor.
  • 2–3 tablespoons sugar Adjust to taste.
  • a splash cup water Just enough to help the strawberries break down.
For the Soda
  • 1 cup sparkling water Use chilled sparkling water for longer-lasting fizz.
  • 2–3 tablespoons homemade strawberry syrup To taste, more for a sweeter soda.
  • 1–2 tablespoons cream Optional for a creamy texture.
  • as needed whipped cream For topping, right before serving.
  • as needed ice cubes Optional, for serving.
  • as needed fresh strawberries For garnish, optional.

Method
 

Make the Strawberry Syrup
  1. Combine chopped strawberries, sugar, and a splash of water in a small saucepan.
  2. Cook over medium heat until the fruit breaks down and the mixture thickens, about 6–8 minutes.
  3. Strain to remove seeds if a smooth syrup is desired.
Chill the Syrup
  1. Cool the syrup to room temperature, then refrigerate until chilled.
Assemble the Drink
  1. Add 2–3 tablespoons of chilled syrup to a tall glass.
  2. Add ice if desired and pour 1 cup of chilled sparkling water over the syrup.
Stir and Add Cream
  1. Gently stir with a long spoon for 2–3 turns and add cream if using.
Top and Serve
  1. Top with a dollop of whipped cream and garnish with a sliced strawberry.

Notes

For a creamier texture, add a splash of heavy cream or half-and-half. Use chilled components to keep fizz longer. Assemble just before serving for best results.
