  • 12 oz Strawberries, fresh Chopped small for better mixing
  • 1 large Egg At room temperature
  • 2 3/4 cups All-purpose flour
  • 1/2 tsp Baking powder
  • 1/2 tsp Baking soda
  • 27 tbsp Granulated sugar
  • 1/2 tsp Salt
  • 2 1/2 tsp Vanilla
  • 1 cup Butter, unsalted At room temperature
  • 6 oz Cream cheese Cold, cut into small pieces

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, cream together the unsalted butter and granulated sugar until light and fluffy.
  3. Add the egg and vanilla, mixing until combined.
  4. In another bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chopped fresh strawberries and cream cheese until evenly distributed.
  7. Scoop tablespoon-sized amounts of dough onto a baking sheet lined with parchment paper, spacing them apart.
Baking
  1. Bake for 10-12 minutes or until the edges are lightly golden.
  2. Allow the cookies to cool on the sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

These cookies are best served at room temperature and pair well with milk, tea, or coffee. For an extra soft texture, reheat a cookie in the microwave for a few seconds before serving.
