Ingredients
  

For the Chicken
  • 6 pieces chicken drumsticks
  • 2 tbsp honey
  • 3 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp ketchup
  • 1 tbsp olive oil
  • 1 tsp paprika
  • Salt & black pepper to taste
For the Rice and Salad
  • 2 cups cooked white rice can be pre-cooked
  • 1 cup lettuce, chopped
  • 1/2 cup cucumber, sliced
  • 1 cup tomato, sliced
  • 1/4 cup red onion, sliced

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Season the drumsticks with salt, pepper, paprika, and olive oil.
  3. In a bowl, mix honey, garlic, soy sauce, and ketchup to create the honey garlic sauce.
Cooking
  1. Place the chicken on a baking sheet and bake for 35–40 minutes, brushing with the sauce halfway through.
  2. While the chicken cooks, fluff the cooked rice.
Assembly
  1. Assemble the salad by combining lettuce, cucumber, tomato, and onion in a bowl.
  2. Serve the drumsticks over the rice with the salad on the side.

Notes

For extra flavor, marinate the chicken in the honey garlic mixture for a few hours or overnight before cooking. You can use chicken thighs or wings if preferred. Adjust the sweetness by adding more or less honey according to taste. To store leftovers, let the chicken cool completely and transfer to an airtight container in the refrigerator for up to three days, or freeze for up to three months.
