Ingredients
Method
Preparation
- Begin by cooking the brown rice according to package instructions. Rinsing the rice beforehand helps achieve a fluffier texture.
- In a bowl, mix together the teriyaki sauce, honey, soy sauce, and sesame oil until well combined.
- Season both sides of the chicken with salt and pepper.
Cooking
- Heat a skillet over medium heat and cook the chicken for about 6-8 minutes on each side until golden brown and cooked through.
- Once the chicken is done, pour the glaze over it and allow it to simmer for a few minutes until slightly thickened.
- While the chicken is cooking, steam the broccoli until bright green and tender, and sauté the bell peppers until soft but still vibrant.
Assembly
- Place a generous serving of brown rice at the bottom of each bowl, top with sliced chicken, and add the sautéed vegetables.
- Drizzle more glaze on top if you desire.
- Finish with a sprinkle of sesame seeds and chopped green onions.
Notes
This dish is perfect for meal prepping as it stores well in the fridge for up to 4 days. Reheat with a splash of water or extra glaze to keep chicken moist.
