  • 1 lb chicken thighs or breasts Choose high-quality chicken for the best flavor.
  • 2 cups cooked brown rice Can substitute with quinoa for a different texture.
  • 1 cup broccoli florets
  • 1 cup bell peppers, sliced
  • 1/2 cup teriyaki sauce Ensure gluten-free if needed.
  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • to taste Salt and pepper
  • for garnish Sesame seeds Adds a crunchy texture.
  • for garnish Green onions Chopped for garnish.

Method
 

Preparation
  1. Begin by cooking the brown rice according to package instructions. Rinsing the rice beforehand helps achieve a fluffier texture.
  2. In a bowl, mix together the teriyaki sauce, honey, soy sauce, and sesame oil until well combined.
  3. Season both sides of the chicken with salt and pepper.
Cooking
  1. Heat a skillet over medium heat and cook the chicken for about 6-8 minutes on each side until golden brown and cooked through.
  2. Once the chicken is done, pour the glaze over it and allow it to simmer for a few minutes until slightly thickened.
  3. While the chicken is cooking, steam the broccoli until bright green and tender, and sauté the bell peppers until soft but still vibrant.
Assembly
  1. Place a generous serving of brown rice at the bottom of each bowl, top with sliced chicken, and add the sautéed vegetables.
  2. Drizzle more glaze on top if you desire.
  3. Finish with a sprinkle of sesame seeds and chopped green onions.

Notes

This dish is perfect for meal prepping as it stores well in the fridge for up to 4 days. Reheat with a splash of water or extra glaze to keep chicken moist.
