Ingredients
  

Steak Preparation
  • 2 pieces beef steaks (sirloin or ribeye) Look for fresh cuts with good marbling.
  • 1 tbsp olive oil For searing the steaks.
  • 1 tsp garlic powder For seasoning.
  • 1 tsp paprika For seasoning.
  • 1 tsp salt To taste.
  • 1/2 tsp black pepper To taste.
Onion and Bean Preparation
  • 2 large onions, sliced Firm with thin, dry skin.
  • 1 tbsp butter For caramelizing onions.
  • 1 tsp brown sugar To enhance sweetness of onions.
  • 2 cups cooked black beans Warm with garlic.
  • 1 clove garlic, minced To flavor the beans.
Side Dishes
  • 2 cups cooked white rice Make ahead or cook fresh.
  • 1 lb French fries Fried until golden brown.
  • 2 eggs whole Fried for topping.
  • 1 tbsp butter For frying the eggs.
  • 1 tbsp parsley, chopped For garnish.
  • 1 slices tomato Fresh for serving.

Method
 

Prepare the Fries
  1. Heat oil in a deep fryer or skillet until it shimmers. Add fries and fry for 3-4 minutes until golden brown and crispy.
Caramelize the Onions
  1. Melt butter in another skillet over medium heat. Add sliced onions and stir occasionally for about 20 minutes until they soften and turn golden brown.
Cook the Steaks
  1. Season steaks with garlic powder, paprika, salt, and pepper. Heat olive oil in a skillet until shimmering. Sear steaks for 4-5 minutes on each side to form a crust.
Warm the Beans
  1. Combine black beans and minced garlic in a small saucepan. Season with salt and pepper, then warm over medium heat for around 5 minutes.
Fry the Eggs
  1. In a skillet, heat butter until bubbling. Crack eggs into the skillet and cook for 2-3 minutes until the whites are set.
Assemble the Dish
  1. On a plate, place a juicy steak next to a mound of rice, a scoop of black beans, and serve with fries. Top with a fried egg, tomato slices, and parsley.

Notes

Store in an airtight container for up to three days in the fridge. For freezing, use a freezer-safe container for up to three months. Thaw overnight before reheating.
