  • 4 pieces pork chops Look for cuts that are firm and pink, with good marbling.
  • 4 medium potatoes, sliced
  • 1 piece onion, chopped
  • 4 cloves garlic, minced
  • 1 cup chicken broth Can substitute with vegetable broth.

  • to taste Salt and pepper
  • 2 tablespoons olive oil For searing the pork.

Method

Preparation
  1. In a skillet over medium-high heat, heat the olive oil. Season the pork chops generously with salt and pepper.
  2. Sear the chops for about 4-5 minutes on each side until they develop a golden-brown crust.
  3. In the bottom of your slow cooker, create a layer of sliced potatoes and chopped onions.
  4. Place the browned pork chops on top of the layer of potatoes.
  5. In a separate bowl, combine the chicken broth, minced garlic, thyme, and additional salt and pepper as needed. Pour this mixture evenly over the pork chops.
Cooking
  1. Cover the slow cooker and cook on low for 6-8 hours, or on high for 3-4 hours.
  2. Check occasionally to ensure there's enough liquid, adding more broth if necessary.

Notes

Serve with a fresh salad or steamed vegetables. For a comforting finish, plate over mashed potatoes to soak up the broth. Store leftovers in an airtight container for up to three days or freeze for up to three months.
