Ingredients

Main Ingredients
  • 4 pieces pork chops (about 1-inch thick) Look for pale pink meat with even marbling.
  • 2 large onions, thinly sliced Yellow onions yield the best caramelization.
  • 2 tablespoons butter Use for sauteing onions.
  • 1 tablespoon olive oil Combines with butter for frying.
  • 2 cups beef broth Choose low-sodium to control salt.
  • 1 teaspoon Worcestershire sauce Adds depth to the broth.
  • to taste salt and pepper Season pork chops accordingly.
  • 1 cup shredded cheese (Swiss or Gruyère) Freshly grated cheese melts better.
  • Fresh thyme for garnish Optional, adds freshness.

Method

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Melt butter and olive oil in a large skillet over medium heat. Add the sliced onions. Cook until caramelized, stirring often, about 15–20 minutes.
  3. Season the pork chops with salt and pepper. In the same skillet, push onions to the side or remove them briefly. Sear the pork chops on both sides until browned, about 2–3 minutes per side.
  4. Add beef broth and Worcestershire sauce to the skillet, scraping up browned bits. Bring to a simmer.
  5. Top each pork chop with caramelized onions and a layer of shredded cheese.
  6. Transfer the skillet to the preheated oven and bake for 20–25 minutes, or until the pork chops reach an internal temperature of 145°F (63°C).
  7. Remove from the oven and let rest for 5 minutes. Garnish with fresh thyme before serving.

Notes

Serve with mashed potatoes or buttered egg noodles to soak up the sauce. Store leftovers in the fridge for up to 3-4 days.
