  • 1 Egg, large
  • 3/4 cup Honey
  • 2 1/2 cups All purpose flour
  • 1 tsp Baking powder
  • 1/2 cup Brown sugar, packed
  • 1 1/2 tsp Cinnamon
  • 1/2 tsp Salt
  • Sea salt, Flaky (for sprinkling)
  • 1 tsp Vanilla extract
  • 1 cup Butter, unsalted Use room temperature for easier creaming

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and brown sugar until light and fluffy.
  3. Add the egg, honey, and vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, salt, and cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Scoop tablespoon-sized amounts of dough and roll them into balls.
  7. Place them on a baking sheet lined with parchment paper.
  8. Sprinkle flaky sea salt over the top of each cookie.
  9. Bake for about 10-12 minutes or until the edges are lightly golden.
  10. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Let cookies cool completely. Store in an airtight container at room temperature for up to 4 days. For longer storage, freeze in a sealed bag for up to 2 months. Thaw at room temperature before serving.
