  • 1 - 1.5 lbs boneless, skinless chicken breasts or thighs Primary protein source.
  • 1 cup uncooked white or brown rice Main carbohydrate component.
  • 1 packet ranch seasoning Provides the distinctive ranch flavor.
  • 1 cup chicken broth Low-sodium chicken broth recommended.
  • 1/2 cup sour cream Adds creaminess and tang.
Optional Vegetables
  • 1 cup fresh or frozen peas For added sweetness.
  • 1 cup sliced carrots Adds crunch and flavor.
  • 1 cup bell peppers Can be green, red, or yellow.
  • 1 cup sliced mushrooms For an earthy flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9x13 baking dish to prevent sticking.
  3. Combine rice, chicken broth, ranch seasoning, and sour cream in the dish. Stir until mixed well.
Cooking the Chicken
  1. Cook chicken until tender and fully cooked. You can use pre-cooked chicken or cook it fresh.
Assembling the Dish
  1. Place cooked chicken on top of the rice mixture in the dish.
  2. Add any additional vegetables or seasonings if desired.
  3. Bake for about 55 minutes or until the rice has absorbed the broth and is tender.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the microwave or oven until warm.
