Frosting

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until fluffy.
  3. Add in the eggs and vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together flour, baking soda, ground cinnamon, and salt.
  5. Gradually add the dry mixture to the creamed mixture, mixing until just combined.
  6. Stir in the rolled oats until evenly distributed.
  7. Drop tablespoons of dough onto a baking sheet lined with parchment paper.
Baking
  1. Bake for 10-12 minutes, until the edges are golden brown but the centers remain slightly soft.
  2. Allow cookies to cool completely on a wire rack.
Frosting
  1. Beat the softened cream cheese, powdered sugar, and milk together until smooth.
  2. Spread frosting on the bottom of one cookie and top with another to create a sandwich.

Notes

Store in an airtight container for up to one week, or freeze for up to three months. For a delightful touch, sprinkle cinnamon on top of the frosting.
