Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until fluffy.
- Add in the eggs and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together flour, baking soda, ground cinnamon, and salt.
- Gradually add the dry mixture to the creamed mixture, mixing until just combined.
- Stir in the rolled oats until evenly distributed.
- Drop tablespoons of dough onto a baking sheet lined with parchment paper.
Baking
- Bake for 10-12 minutes, until the edges are golden brown but the centers remain slightly soft.
- Allow cookies to cool completely on a wire rack.
Frosting
- Beat the softened cream cheese, powdered sugar, and milk together until smooth.
- Spread frosting on the bottom of one cookie and top with another to create a sandwich.
Notes
Store in an airtight container for up to one week, or freeze for up to three months. For a delightful touch, sprinkle cinnamon on top of the frosting.
