Ingredients
  

For the crust
  • 1.5 cups 1 1/2 cups graham cracker crumbs
  • 0.5 cups 1/2 cup unsalted butter, melted
For the cheesecake filling
  • 3 packages 3 packages cream cheese, room temperature Use room temperature for a smooth mixture.
  • 1 cup 1 cup granulated sugar
  • 3 large 3 large eggs Add one at a time to avoid air incorporation.
  • 1 teaspoon 1 teaspoon pure vanilla extract
For the topping
  • 1 cup 1 cup caramel sauce Warm gently if thick.

Method
 

Preparation
  1. Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.
  2. Combine graham cracker crumbs and melted butter in a mixing bowl until well mixed. Press into the bottom of the prepared springform pan to form the crust.
  3. In another bowl, beat the cream cheese until smooth. Gradually add sugar and mix until well combined.
  4. Add eggs one at a time, mixing well after each addition. Then add vanilla extract and mix until smooth.
  5. Pour the cream cheese mixture over the crust in the springform pan.
Baking
  1. Bake in the preheated oven for about 55-60 minutes, or until the center is set and the edges are slightly puffed.
  2. Remove from the oven and let it cool. Once cooled, refrigerate for at least 4 hours or overnight.
Serving
  1. Before serving, drizzle the caramel sauce over the top of the cheesecake. Slice and enjoy!

Notes

For best texture, chill for at least 4 hours before serving. You can use a hot, clean knife to slice for neat pieces. Optionally, add a sprinkle of sea salt or whipped cream on top.
