Preparation
- Preheat your oven to 425°F (220°C).
- Scrub the potatoes clean and poke several holes in them with a fork.
- Rub potatoes with olive oil and sprinkle with salt.
Baking Potatoes
- Bake the potatoes for 45-60 minutes until soft when poked.
Cooking Steak
- While the potatoes bake, heat a skillet over medium-high heat and add olive oil.
- Season steak bites with salt and pepper, then cook in the skillet until browned.
Assembling
- Once baked, cut the potatoes open and fluff the insides with a fork.
- Top with butter, cooked steak bites, creamy sauce, and fresh herbs.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days, or freeze for up to a month. For reheating, bake at a low temperature.
