Ingredients
  

For the crust
  • 1 cup unsalted butter, softened Use real butter for better flavor and texture.
  • 1/2 cup granulated sugar For crust.
  • 2 cups all-purpose flour Can substitute with gluten-free flour.
  • 1/4 teaspoon salt Enhances flavor.
For the filling
  • 4 large eggs Use room-temperature eggs for better mixing.
  • 1 cup granulated sugar For filling.
  • 2/3 cup fresh lemon juice About 3–4 lemons; fresh is best.
  • 1 teaspoon lemon zest Use fresh zest for bright flavor.
  • 1/4 teaspoon baking powder Prevents a rubbery texture.
  • Powdered sugar for dusting Add before serving.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish. Line with foil or parchment for easy removal.
  2. In a mixing bowl, cream together the softened butter and 1/2 cup sugar until light and fluffy.
  3. Gradually add 2 cups flour and salt and mix until combined.
  4. Press the mixture into the bottom of the prepared dish to form an even layer.
  5. Bake for 20 minutes or until lightly golden.
Filling
  1. In another bowl, whisk together the eggs, 1 cup sugar, lemon juice, lemon zest, and baking powder until smooth and slightly frothy.
  2. Pour the lemon filling over the pre-baked crust.
  3. Bake for an additional 20–25 minutes until set, the center should jiggle slightly.
  4. Allow to cool completely, then dust with powdered sugar before serving.

Notes

For the best texture and taste, use fresh ingredients and follow baking times closely. Adjust sugar if lemons are very tart.
