Preparation
- Preheat the oven to 375°F (190°C).
- Cook and shred about 2 cups of chicken.
- In a large bowl, mix shredded chicken, cream cheese, sour cream, cheddar, and Monterey Jack cheese.
- Chop the jalapeños and stir them into the mixture with garlic powder, onion powder, salt, and pepper.
Assembling the Casserole
- Grease a 9x13-inch baking dish and layer the chicken mixture in it.
- Top with a layer of crushed crackers or breadcrumbs.
- Repeat the layers and finish with a generous layer of cheese.
Baking
- Bake in the preheated oven for 25-30 minutes until golden brown and bubbly.
- Check during the last 10 minutes to prevent over-browning.
Notes
Adjust spiciness by modifying jalapeño amounts. For a vegetarian version, use portobello mushrooms or extra-firm tofu.
