Ingredients
  

For the cheese mixture
  • 8 oz Cream cheese, softened Soften the cream cheese for smooth mixing.
  • 2 cups Cheddar cheese, sharp grated Use sharp cheddar for more flavor.
  • 1/3 cup Mayonnaise
  • 1/4 tsp Garlic powder
  • 1/4 tsp Onion powder
  • 1/4 tsp Cayenne pepper Adjust based on your spice preference.
  • Salt and pepper to taste Salt and pepper to taste Taste the mix before baking.
For the mix-ins
  • 1 Jalapeno Jalapeno, diced Remove seeds for less heat.
  • 6 slices Bacon, small cooked and chopped Use thick-cut bacon for more flavor.
  • 4 oz Pimentos, chopped
  • 1 cup Pecans, chopped Chop pecans small for even distribution.
For serving
  • 1 Pretzel stick Pretzel sticks (for serving) Optional for dipping.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the cream cheese, cheddar cheese, mayonnaise, garlic powder, onion powder, cayenne pepper, and salt and pepper. Mix until smooth.
  3. Add in the diced jalapeno, cooked bacon, pimentos, and pecans. Stir until evenly combined.
  4. Using your hands, form the mixture into bite-sized balls and place them on a baking sheet.
Baking
  1. Bake in the oven for about 15-20 minutes, or until the cheese is bubbly and the bites are golden.
  2. Allow to cool slightly before serving.

Notes

Cool completely before storing. Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a 350°F oven for 8-10 minutes. These bites should not be frozen as the texture changes.
