Ingredients
  

Dry Ingredients
  • 4 cups all-purpose flour Use unbleached all-purpose flour for cleaner flavor.
  • 1 teaspoon baking soda Check freshness before use.
  • 1 teaspoon salt Reduce to 1/2 teaspoon for low-sodium.
Wet Ingredients
  • 1 3/4 cups buttermilk Use cold buttermilk for better oven spring.

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, whisk together flour, baking soda, and salt until there are no lumps.
  3. Make a well in the center and pour in the buttermilk.
  4. Stir gently until a soft dough forms, being careful not to overmix.
  5. Turn the dough onto a floured surface and knead lightly until smooth.
  6. Shape the dough into a round and place it on a baking sheet lined with parchment paper.
  7. Cut a deep cross into the top of the loaf to help it rise.
Baking
  1. Bake for 30–35 minutes or until the crust is golden brown and sounds hollow when tapped.
  2. Allow to cool for at least 20 minutes before slicing to firm up the crumb.

Notes
