Preparation
- Preheat the oven to 350°F (175°C) and grease a muffin tin.
- In a mixing bowl, beat the eggs and honey together until well combined.
- In another bowl, mix the flour, cornmeal, baking powder, salt, and sugar.
- Add the dry ingredients to the wet ingredients and stir until just combined.
- Mix in the melted butter and buttermilk until the batter is smooth.
- Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
Baking
- Bake for 15-20 minutes or until a toothpick comes out clean.
- Let cool slightly before serving.
