Method
Preparation of Filling
- Combine powdered sugar, softened butter, heavy cream, and peppermint extract until the mixture binds.
- Chill the mixture to firm it up, then freeze briefly to prevent melting during coating.
Molding Patties
- Shape the mixture into small discs about 1 inch across and 1/4 inch thick.
- Place on a tray and freeze for about 30 minutes until firm.
Coating with Chocolate
- Melt dark chocolate until smooth and glossy, then dip each frozen patty into the melted chocolate.
- Allow excess chocolate to drip off and place the patties back on parchment paper to harden.
Notes
Store in an airtight container for up to 2 weeks in the fridge, or up to 3 months in the freezer. For a softer center, place patties in the fridge for 30 minutes before serving.
