Ingredients
  

For the Meatballs
  • 1 lb ground beef or lamb High-quality meat enhances flavor.
  • 1/2 cup breadcrumbs Gluten-free breadcrumbs can be used for dietary needs.
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley Fresh herbs enhance flavor.
  • 1 each egg
  • 2 cloves garlic, minced
  • 1 tsp oregano
  • to taste Salt and pepper
For Serving
  • 1 cup cooked quinoa or rice
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, sliced
  • 1/2 cup feta cheese, crumbled
  • as needed Tzatziki sauce For serving

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine ground beef or lamb, breadcrumbs, Parmesan cheese, chopped parsley, egg, minced garlic, oregano, salt, and pepper. Mix thoroughly but do not overmix.
  3. Shape the mixture into 1 to 1.5 inch meatballs and place them on a lined baking sheet.
Cooking
  1. Bake meatballs for 20-25 minutes or until golden brown and cooked through, reaching an internal temperature of 160°F (71°C).
Assembly
  1. In a serving bowl, layer the cooked quinoa or rice, followed by the roasted meatballs, diced cucumber, cherry tomatoes, sliced red onion, and crumbled feta cheese.
  2. Drizzle with tzatziki sauce just before serving.

Notes

Enhance flavor with lemon juice, or Greek yogurt for moister meatballs. Avoid overworking the meatball mixture.
