Ingredients

For the steak and potatoes
  • 1 pound steak (sirloin or ribeye) Look for cuts with good marbling for better flavor and tenderness.
  • 1 pound baby potatoes, halved Choose firm, smooth potatoes free of blemishes.
  • 4 tablespoons unsalted butter Can substitute with plant-based butter for a dairy-free option.
  • 4 cloves garlic, minced Add near the end of cooking to avoid burning.
  • 2 teaspoons fresh thyme, chopped
  • 2 teaspoons fresh rosemary, chopped
  • Salt and pepper, to taste Essential for enhancing flavor.
  • Olive oil, for cooking Use to coat the skillet before cooking.

Method

Preparation
  1. Begin by preheating a large skillet over medium-high heat and drizzle olive oil to coat the pan.
  2. Season the steak with salt and pepper on both sides and sear in the skillet for about 3-4 minutes for medium-rare.
  3. Remove the steak from the skillet and set aside.
  4. Add the halved potatoes to the same skillet and cook for 10-15 minutes, stirring occasionally, until golden and crispy.
  5. Lower the heat and add butter, minced garlic, thyme, and rosemary; stir and cook for another 2-3 minutes.
  6. Return the cooked steak to the skillet and toss gently to combine, heating for an additional minute.
  7. Serve the dish hot, optionally with crispy fries on the side.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Reheat in a skillet to maintain potato crispness. Consider adding a spicy kick with red pepper flakes or substitute with chicken or plant-based options for variations.
