Ingredients
  

Main Ingredients
  • 1 lb ground beef Pick 80/20 for flavor, or leaner for a lighter soup.
  • 1 can black or kidney beans, drained and rinsed Use low-sodium if possible.
  • 1 can corn, drained Use low-sodium if possible.
  • 1 can diced tomatoes (with juices)
  • 2 tablespoons taco seasoning Toast for brighter flavor if desired.
  • 4 cups beef broth Use high-quality homemade or boxed broth.
Optional Toppings

  • to taste cilantro

Method
 

Preparation
  1. Heat a large pot on medium and add the ground beef.
  2. Cook until no pink remains and the meat is brown and caramelized.
  3. Drain excess fat from the pot but leave a tablespoon for flavor.
  4. Add the drained beans, corn, and canned diced tomatoes with juices to the pot.
  5. Sprinkle 2 tablespoons of taco seasoning evenly and stir to coat.
Cooking
  1. Pour in 4 cups of beef broth, stir, and bring to a boil.
  2. Reduce heat to maintain a gentle simmer and cook uncovered for about 20 minutes.
  3. Taste and adjust seasoning, if necessary.
Serving
  1. Ladle soup into bowls and garnish with toppings such as cheese, sour cream, and cilantro.

Notes

For a vegetarian version, substitute ground beef with crumbled tempeh or extra beans. For healthy options, consider using lean turkey or additional veggies. Flavor improves if made a day ahead.
