Main Ingredients
  • 2 cups Chicken, Cooked Use leftover cooked chicken for convenience.
  • 1.5 cups French fried onions Provides a crunchy texture.
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 2 tbsp Parsley Fresh or dried can be used.
  • 1 can Cream of chicken soup
  • 1 cup French onion soup Adds onion flavor.
  • 3 cups White rice, Cooked Day-old rice works best.
  • to taste Black pepper
  • to taste Salt
  • 1 cup Mozzarella or swiss cheese Use a mix for richer flavor.
  • 1 cup Sour cream

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked chicken, French fried onions, garlic powder, onion powder, parsley, cream of chicken soup, French onion soup, cooked white rice, black pepper, salt, mozzarella or swiss cheese, and sour cream.
  3. Mix everything until well combined.
Baking
  1. Transfer the mixture into a greased baking dish.
  2. Top with additional cheese if desired.
  3. Bake in the preheated oven for 25-30 minutes or until the cheese is golden and bubbly.
  4. Let it cool slightly before serving.

Notes

Serve warm straight from the dish. A green salad or steamed vegetables pair well. Add extra French fried onions on top for crunch. Cool the bake to room temperature within two hours before refrigerating. It can be reheated in the oven or microwave.
