Ingredients
  

For the Chicken
  • 6 pieces chicken drumsticks Look for plump, vibrant pink drumsticks for freshness.
  • 2 tbsp olive oil Used for marinating the chicken.
  • 1 tbsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried parsley
  • 1/2 tsp black pepper
  • 1 tsp salt
For the Fries
  • 4 large potatoes, cut into fries Double fry for extra crispiness if desired.
  • Vegetable oil for frying Heat to about 350°F (175°C) for frying.
For the Salad
  • 2 cups mixed lettuce
  • 1 cup cucumber slices
  • 1 cup cherry tomatoes
  • 1/4 medium red onion, sliced into rings
  • 1/4 cup chopped parsley
For the Dip
  • 1/2 cup mayonnaise Can substitute with dairy-free alternative.
  • 1 tsp garlic powder
  • 1 tbsp lemon juice
  • 1/2 cup ketchup For serving.

Method
 

Marinate the Chicken
  1. In a bowl, mix olive oil, paprika, garlic powder, onion powder, dried parsley, salt, and black pepper. Coat the chicken drumsticks thoroughly. Let them rest for 30 minutes to allow flavors to penetrate the meat.
Prepare the Fries
  1. Heat vegetable oil in a deep pan or air fryer until it reaches about 350°F (175°C). Fry the potato fries in batches until golden brown and crispy, about 5-7 minutes.
Grill the Drumsticks
  1. Preheat the grill to medium heat. Place the marinated drumsticks on the grill and cook for 25-30 minutes, turning occasionally, until the internal temperature reaches 165°F.
Make the Salad
  1. While the chicken is grilling, arrange the mixed lettuce, cucumber slices, cherry tomatoes, and red onion rings on a platter.
Prepare the Dip
  1. In a small bowl, combine mayonnaise, garlic powder, and lemon juice. Mix together to create a creamy dip.
Serve It Up
  1. On a large serving plate, arrange the grilled drumsticks next to the crispy fries and fresh salad. Serve with ketchup and garlic dip, garnished with parsley.

Notes

The chicken drumsticks can be stored in the fridge for up to 4 days. For longer storage, freeze the leftovers for up to 3 months. Double frying the potatoes will enhance their texture and crispiness.
