Ingredients
  

For the Chicken and Fries
  • 2 large chicken breasts, sliced Choose organic if possible.
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1/2 tsp cumin
  • Salt and black pepper to taste
  • 4 cups French fries Use gluten-free fries if necessary.
For the Tzatziki
  • 1 cup Greek yogurt For a lighter option, use dairy-free yogurt.
  • 1/2 cup cucumber, grated and drained Ensure it's well-drained for the right consistency.
  • 1 clove garlic, minced
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill, chopped
For the Bowl Assembly
  • 1 cup cucumber, diced Fresh cucumbers add a crisp texture.
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives Using whole olives enhances flavor.
  • 1/4 cup feta cheese, crumbled Opt for marinated feta for extra flavor.
  • 1/2 medium red onion, thinly sliced
  • Fresh dill for garnish

Method
 

Marinate the Chicken
  1. In a bowl, combine sliced chicken with olive oil, paprika, garlic powder, oregano, cumin, salt, and pepper. Allow the chicken to marinate for at least 15 minutes.
Cook the Fries
  1. Bake or air-fry the French fries until golden and crispy, about 20-25 minutes. Watch closely to prevent burning.
Grill the Chicken
  1. Heat a grill pan over medium-high heat and sear the marinated chicken for 5-6 minutes on each side until cooked through.
Make the Tzatziki
  1. In a bowl, mix Greek yogurt, grated cucumber, minced garlic, lemon juice, dill, and salt. Drain the cucumber well to keep the sauce creamy.
Assemble the Bowl
  1. In a large bowl, arrange grilled chicken, crispy fries, diced cucumbers, cherry tomatoes, olives, feta cheese, and red onion. Drizzle with tzatziki and garnish with fresh dill.

Notes

Store in an airtight container in the fridge for up to four days. For freezing, store the assembled bowl without tzatziki for up to two months.
