Method
 

Preparation
  1. Preheat the oven to 375°F (190°C) and set an oven rack in the center.
  2. In a skillet, heat olive oil over medium heat. Add black beans, chili powder, cumin, salt, and pepper. Cook until heated through, about 3-5 minutes.
  3. Lay corn tortillas on a baking sheet. Fill each with the black bean mixture and sprinkle with grated pepper jack cheese.
Baking
  1. Bake in the preheated oven for 10-12 minutes or until crispy and cheese is melted.
Cilantro Lime Sauce
  1. Blend fresh cilantro with lime juice, salt, and a little water until smooth and bright green.

  1. Serve the crispy tacos with the cilantro lime sauce and a dollop of sour cream or vegan alternative.

Notes

Make the sauce slightly thinner for easier spreading. You can easily modify this recipe by adding more vegetables or using a vegan cheese alternative.
