Ingredients

Main Ingredients
  • 1 pound beef stew meat, cut into bite-sized pieces Choose high-quality, well-marbled beef for enhanced flavor.
  • 1 small onion, diced
  • 4 cloves garlic, minced
  • 1 can cream of mushroom soup (10.5 oz) Can be substituted with a homemade version or a different cream-based soup.
  • 1 cup beef broth
  • 1 cup heavy cream For dairy-free options, consider using coconut milk.
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 8 ounces pasta (penne or your favorite shape) Cook pasta until al dente.
  • 1 cup grated Parmesan cheese
  • Fresh parsley, chopped (optional, for garnish)

Method

Preparation
  1. Start by placing the beef stew meat, diced onion, and minced garlic in the slow cooker. Make sure the beef is evenly spread out at the bottom of the cooker for consistent cooking.
  2. In a separate bowl, whisk together the cream of mushroom soup, beef broth, heavy cream, dried basil, and dried oregano. After mixing, pour the sauce over the beef, onion, and garlic, stirring to incorporate all the flavors.
Cooking
  1. Cover the slow cooker and set it to cook on low for 6-8 hours. You will know it’s ready when the beef is tender and easily pulls apart with a fork.
  2. About 30 minutes before the beef is done, bring a pot of salted water to a boil and cook the pasta according to the package directions until al dente. Drain the pasta and set it aside, keeping it warm.
  3. Stir the cooked pasta into the slow cooker along with the grated Parmesan cheese. Season with salt and pepper to taste, mixing everything until the pasta is well coated in the creamy sauce.
  4. Allow the mixture to cook for an additional 10-15 minutes. This helps meld the flavors of the sauce with the pasta and gives it a deliciously creamy texture.
Serving
  1. Once finished, garnish with chopped parsley if desired and enjoy the comforting goodness hot.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3-4 days. If freezing, keep it in the freezer for up to 3 months. To reheat, thaw overnight and warm in a pot over low heat, adding a splash of beef broth or cream to restore creaminess.
