  1. In a large pot, cook the Italian sausage over medium heat until browned and fragrant, about 5-7 minutes. Break it up into smaller pieces while it cooks.
  2. Add the diced onion and minced garlic to the pot. Cook until the onion becomes translucent, about 3-4 minutes.
  3. Pour in the chicken broth and bring the mixture to a simmer for about 2 minutes.
  4. Add the gnocchi and cook according to package instructions, typically around 2-3 minutes until they float to the surface.
  5. Stir in the heavy cream, spinach, and diced tomatoes, cooking for about 5 more minutes.
  6. Season with salt and pepper to taste, and add a sprinkle of red pepper flakes for heat if desired.
  7. Serve hot, topped with freshly grated Parmesan cheese.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days or freeze for about 2 months. Reheat gently on the stove over low heat to preserve gnocchi texture.
