Ingredients
  

Dry Ingredients
  • 1/2 cup Oat flour For a mild, whole-grain flavor.
  • 1/2 tsp Baking powder For leavening.
  • 1/4 tsp Salt
  • 2 tbsp Sweetener, granulated Choose your preferred sweetener.
Wet Ingredients
  • 2 large Eggs Use room temperature for best results.
  • 1 tsp Vanilla extract For added flavor.
  • 1 cup Cottage cheese Full-fat or low-fat.
Optional Add-ins
  • 1/4 cup Optional add-ins (blueberries, chocolate chips, or chopped nuts) Can be added for variety.

Preparation
  1. In a bowl, whisk together the eggs, baking powder, oat flour, salt, sweetener, and vanilla until smooth.
  2. Fold in the cottage cheese gently until just combined. Small curds are fine.
Cooking
  1. Heat a non-stick skillet over medium heat and grease with cooking spray or butter.
  2. Pour about 1/4 cup of batter for each pancake onto the skillet.
  3. Cook until bubbles form on the surface and edges look set, about 2–3 minutes.
  4. Flip and cook the other side until golden brown, about 1-2 minutes.
Serving
  1. Serve warm with your choice of toppings such as powdered sugar, syrup, fresh berries, or yogurt.

Notes

For the best texture, do not overmix after adding cottage cheese. Let the batter rest for 5 minutes if needed, and ensure to test the pan heat with a sample pancake.
