Broth and Vegetables

Method
 

Preparation
  1. Heat the oil in a large pot over medium heat until it shimmers.
  2. Add the chopped onion, diced carrots, and diced celery. Sauté until vegetables soften, about 5–7 minutes.
  3. Stir in the minced garlic and cook for an additional minute.
Simmering
  1. Pour in the broth and bring to a simmer.
  2. Add the diced tomatoes, green beans, peas, and thyme.
  3. Season with salt and pepper to taste.
  4. Simmer for 20–30 minutes, allowing the flavors to meld.
Serving
  1. Serve warm, garnished with fresh herbs if desired.
