Preparation
- In a bowl, combine cilantro, lime juice, minced garlic, olive oil, salt, and pepper to create the marinade.
- Place chicken breasts in a zip-top bag or shallow dish and pour marinade over. Marinate for at least 30 minutes; up to 2 hours for deeper flavor.
- Preheat the grill to medium-high (about 400°F / 200°C) and oil grill grates lightly.
Cooking
- Grill the marinated chicken on medium-high for 6–7 minutes per side, until internal temperature reaches 165°F (74°C).
- Let cooked chicken rest for 5–7 minutes before slicing across the grain into thin strips.
- Warm the tortillas on the grill for a few seconds on each side until soft.
Assembly
- Assemble the tacos by placing sliced chicken on warm tortillas and topping with pico de gallo, cheese, and desired toppings.
- Serve immediately and enjoy!
