Preparation
- Preheat the oven to 425°F (220°C).
- In a large skillet, melt the butter over medium heat. Add the chopped onion and celery. Sauté until the onion becomes translucent, about 3-4 minutes.
- Add the diced carrots and cook for an additional 3-4 minutes until they soften but still have a slight crunch.
- Stir in the flour, salt, pepper, and thyme, cooking for about one minute.
- Gradually pour in the chicken broth, stirring constantly until the mixture thickens and is creamy, which should take around 3-5 minutes.
- Remove the skillet from the heat and gently fold in the shredded chicken and peas.
- Pour the chicken mixture into a baking dish, spreading it evenly.
Biscuit Preparation
- In a separate bowl, combine the biscuit mix with the 3/4 cup of milk until just blended.
- Drop spoonfuls of the biscuit dough over the chicken filling.
Baking
- Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the biscuits are golden brown.
- Let it cool for a few minutes before serving.
