  • 2 cups cooked chicken, shredded
  • 1 cup carrots, diced
  • 1 cup peas
  • 1 cup celery, diced
  • 1/2 cup onion, chopped
  • 1/4 cup flour
  • 2 cups chicken broth
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme
  • 1 tablespoon butter
Biscuit Ingredients
  • 2 cups biscuit mix
  • 3/4 cup milk (for biscuits)
  • 1/4 cup butter (for biscuits)

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. In a large skillet, melt the butter over medium heat. Add the chopped onion and celery. Sauté until the onion becomes translucent, about 3-4 minutes.
  3. Add the diced carrots and cook for an additional 3-4 minutes until they soften but still have a slight crunch.
  4. Stir in the flour, salt, pepper, and thyme, cooking for about one minute.
  5. Gradually pour in the chicken broth, stirring constantly until the mixture thickens and is creamy, which should take around 3-5 minutes.
  6. Remove the skillet from the heat and gently fold in the shredded chicken and peas.
  7. Pour the chicken mixture into a baking dish, spreading it evenly.
Biscuit Preparation
  1. In a separate bowl, combine the biscuit mix with the 3/4 cup of milk until just blended.
  2. Drop spoonfuls of the biscuit dough over the chicken filling.
Baking
  1. Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the biscuits are golden brown.
  2. Let it cool for a few minutes before serving.

Notes

For dietary substitutions, consider using gluten-free biscuit mix or plant-based milk to make it dairy-free. Store leftovers in an airtight container in the fridge for up to 3-4 days, or freeze for up to three months.
