  • 2 pounds chicken breast or thighs, sliced Choose breast for leaner, healthier options or thighs for more flavor.
  • 2 cups bell peppers, sliced Any color of bell peppers works well.
  • 1 cup onion, sliced Yellow or red onions can be used.
  • 1 cup shredded cheese Cheddar or a blend of cheddar and Monterey Jack is recommended.
  • 1 cup cooked rice Can substitute with whole grain tortillas if desired.
  • 1 tablespoon fajita seasoning Adjust to taste.
Optional Ingredients
  • 1 cup diced tomatoes or salsa Great for added moisture and flavor.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Slice the chicken into thin strips and season with fajita seasoning.
  3. Sear the chicken in a hot skillet until cooked through.
  4. In the same skillet, sauté the bell peppers and onions until tender.
Layering for Maximum Flavor
  1. In a baking dish, layer the cooked rice or tortillas at the bottom.
  2. Add a layer of the chicken and vegetable mixture.
  3. Sprinkle a layer of cheese on top.
  4. Repeat the layering process until all ingredients are used, finishing with a layer of cheese.
Baking
  1. Cover with foil and bake for 20 minutes.
  2. Remove the foil and bake for an additional 5-10 minutes until the top is golden and bubbly.

Notes

For extra flavor, consider adding jalapeños or using spicy chorizo. The casserole can be prepared in advance and stored in the refrigerator or frozen for later use.
