  • ⅓ cup butter Melted for sautéing.
  • 1 cup chopped onion Freshly chopped.
  • 1 cup peeled and chopped carrots Freshly chopped.
  • 1 cup chopped celery Freshly chopped.
  • ½ cup flour For thickening the filling.
  • 1 teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 4 cups cooked, diced or shredded chicken Use leftover chicken for best results.
  • ½ cup frozen peas Do not thaw.
For the Biscuits
  • 2 cups Bisquick Can substitute with homemade baking mix if needed.
  • ⅔-¾ cup cold buttermilk Or regular milk as an alternative.
  • ½ cup grated sharp cheddar cheese For added richness.
  • ¼ teaspoon dried parsley
  • 2 tablespoons butter, melted For brushing on top.
  • ⅛ teaspoon garlic powder

Method

Preparation
  1. Preheat your oven to 425°F. Spray a 2 ½ – 3-quart casserole dish with cooking spray and set it aside.
  2. In a separate bowl, whisk together the chicken broth and half-and-half.
Sautéing and Thickening
  1. Melt the butter in a large skillet over medium-high heat. Add the chopped onion, carrots, and celery; sauté these vegetables for about 10 minutes until softened.
  2. Sprinkle the flour into the skillet and continue cooking and stirring for just one more minute. Then gradually stir in the chicken broth mixture and allow it to thicken for about 5-6 minutes.
Combining Ingredients
  1. Stir in the kosher salt, black pepper, diced or shredded chicken, and frozen peas into the thickened mixture.
  2. Transfer the filling to the prepared baking dish and cover the dish with foil. Bake for about 10 minutes.
  3. In a bowl, mix the Bisquick mix, buttermilk, cheddar cheese, and parsley until a soft dough forms.
Baking
  1. After 10 minutes, remove the casserole from the oven, stir the filling, and drop about ¼-cup of the biscuit dough on top.
  2. Return the dish to the oven and bake for about 12 minutes, or until the biscuits are golden brown.
  3. Mix melted butter with garlic powder and brush on the biscuits before serving.
