Preparation
- Preheat your oven to 375°F (190°C). Spray a 9" x 13" casserole dish with non-stick spray.
- In a large skillet, sauté chopped onions and garlic until soft. Add fresh spinach leaves and cook until wilted.
- In a separate bowl, whisk together the eggs, milk, salt, and pepper.
Assembly
- Layer the cooked spinach mixture in the casserole dish. Sprinkle shredded cheese on top.
- Pour the egg mixture over the layers and add more cheese on top.
Baking
- Bake in the preheated oven for 35-40 minutes, until the eggs are set and the top is golden brown.
