  • 8 large Eggs Whisked together with milk and seasonings
  • 4 cups Fresh spinach Washed and chopped
  • 2 cups Shredded cheese (e.g., cheddar or mozzarella) More for topping if desired
  • 1 cup Milk Can use dairy or non-dairy alternative
  • 1 medium Onion Chopped, sautéed with garlic
  • 2 cloves Garlic Minced, sautéed with onion
  • 1/2 teaspoon Salt To taste
  • 1/4 teaspoon Black pepper To taste

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Spray a 9" x 13" casserole dish with non-stick spray.
  2. In a large skillet, sauté chopped onions and garlic until soft. Add fresh spinach leaves and cook until wilted.
  3. In a separate bowl, whisk together the eggs, milk, salt, and pepper.
Assembly
  1. Layer the cooked spinach mixture in the casserole dish. Sprinkle shredded cheese on top.
  2. Pour the egg mixture over the layers and add more cheese on top.
Baking
  1. Bake in the preheated oven for 35-40 minutes, until the eggs are set and the top is golden brown.

Notes
