  • 1 cup breadcrumbs Plain or panko both work; panko gives a lighter texture.
  • 1/2 cup grated Parmesan cheese Freshly grated is best for flavor.
  • 2 cloves garlic, minced Fresh garlic gives the best aroma.
  • 1 ea egg Use room temperature for better mixing.
  • 1/4 cup chopped parsley Fresh parsley adds flavor and color.
  • to taste Salt and pepper Adjust according to preference.
  • 1 cup shredded mozzarella cheese Whole milk mozzarella or part-skim based on richness desired.
  • 1/4 cup milk Use whole milk for best results.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine ground chicken, breadcrumbs, grated Parmesan cheese, minced garlic, egg, chopped parsley, milk, salt, and pepper.
  3. Mix until well combined but do not overmix.
  4. Shape the mixture into a loaf and place it in a baking dish.
  5. Top with shredded mozzarella cheese.
Baking
  1. Bake for 45-50 minutes or until the chicken is cooked through and the cheese is golden.
  2. Let rest for a few minutes before slicing and serving.

Notes

Best served with mashed potatoes or a crisp salad. Resting allows juices to redistribute for moist slices.
