  • 1 pound Brussels sprouts Choose firm, bright green sprouts with tight leaves.
  • 4 ounces Bacon Thick-cut for meatier bites or thin-cut for crispier bits.
  • 2 tablespoons Olive oil Extra virgin olive oil is recommended for flavor.
  • 1 teaspoon Salt Adjust according to taste, keeping in mind the saltiness of bacon.
  • 1 teaspoon Pepper Freshly cracked for best flavor.
  • 2 tablespoons Honey or maple syrup Optional for sweetness.
  • 2 cloves Garlic Optional, add minced for flavor towards the end.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Trim and halve the Brussels sprouts by cutting off the tough stem end and slicing each sprout in half from top to stem.
  3. In a large bowl, toss the Brussels sprouts with olive oil, salt, and pepper until evenly coated.
  4. Spread the Brussels sprouts on a rimmed baking sheet with cut sides down and scatter chopped bacon on top.
Cooking
  1. Roast in the oven for 20-25 minutes, stirring halfway through, until crispy and caramelized.
  2. If desired, drizzle honey or maple syrup over the sprouts before serving and add minced garlic for extra flavor.

Notes

Serve family style or as a topping for grain bowls. Best served warm with a garnish of fresh herbs or a drizzle of syrup.
