- Heat a pan and sauté onion and garlic until fragrant and soft.
- Brown the andouille sausage in the pan until golden.
- Add in the chicken, broth, white beans, diced tomatoes, and Cajun seasoning. Stir and bring to a boil.
- Reduce the heat and let it simmer for about 20 minutes.
- Remove the chicken, shred it with forks, and return it to the pot.
- Stir in the shrimp and cook for an additional 5-7 minutes, until pink.
- Adjust seasoning with salt and pepper to taste.
- Serve hot, garnished with green onions.
Notes
Let chili rest for 5 minutes off the heat to meld flavors. For a creamier texture, blend 1 cup of the beans and stir back into the pot.
