Ingredients
  

For the Casserole
  • 8 large eggs Whisked together
  • 1 lb sausage Cooked and crumbled
  • 1 cup cheddar cheese Grated
  • 8 large tortillas Corn or flour
  • 1 cup salsa Mild, medium, or hot based on preference
  • 1 cup creamy sauce Use sour cream or Greek yogurt
  • 1 each bell pepper Chopped
  • 1 each onion Chopped

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Whisk eggs in a bowl and season with salt and pepper.
  3. Cook sausage in a pan over medium-high heat until browned, breaking it into small pieces.
  4. Sauté chopped bell pepper and onion in the same pan until softened.
  5. Grate cheddar cheese and set aside.
Assembling the Casserole
  1. Layer tortillas at the bottom of a 9x13 inch baking dish.
  2. Spread half of the scrambled eggs, followed by half of the sausage and sautéed vegetables.
  3. Sprinkle half of the grated cheese on top.
  4. Repeat the layers with the remaining tortillas, eggs, sausage, vegetables, and finish with remaining cheese.
Baking
  1. Cover the casserole with foil and bake for 30-35 minutes.
  2. Remove the foil in the last 10 minutes to allow the top to brown.

Notes

This casserole can be assembled the night before and baked in the morning for a stress-free breakfast. It reheats well, making it a great option for leftovers.
