Preparation
- Cube 4 cups of bread (Challah or Brioche) and place it in a large bowl.
- In a separate bowl, mix 8 ounces of softened cream cheese with 1/4 cup of granulated sugar until smooth. Add 1 teaspoon of vanilla extract for flavor.
- Layer the cubed bread with the cream cheese mixture and 2 cups of blueberries in a baking dish, repeating layers until all ingredients are used, ending with a layer of bread on top.
- In another bowl, whisk together 6 large eggs and 1 cup of milk. Pour this egg mixture over the layered bread and toppings.
- Cover the dish and refrigerate overnight for best flavor.
Baking
- Preheat the oven to 350°F (175°C).
- Bake the French toast bake for about 35-40 minutes, until it’s golden brown. Check for doneness by inserting a knife into the center; it should come out clean.
Notes
Soaking the mixture overnight enhances flavor and texture. Adjust sugar to suit your taste, and gluten-free bread can be used for dietary needs.
