  • 4 cups cups of bread (Challah or French) Cubed bread is preferred for soaking.
  • 8 ounces cream cheese Softened; can be plain or flavored.
  • 1/4 cup granulated sugar Adjust sweetness to taste.
  • 1 teaspoon vanilla extract For additional flavor.
  • 2 cups blueberries (fresh or frozen) If using frozen, thaw and pat dry.
  • 6 large eggs For the egg mixture.
  • 1 cup milk

Method
 

Preparation
  1. Cube 4 cups of bread (Challah or Brioche) and place it in a large bowl.
  2. In a separate bowl, mix 8 ounces of softened cream cheese with 1/4 cup of granulated sugar until smooth. Add 1 teaspoon of vanilla extract for flavor.
  3. Layer the cubed bread with the cream cheese mixture and 2 cups of blueberries in a baking dish, repeating layers until all ingredients are used, ending with a layer of bread on top.
  4. In another bowl, whisk together 6 large eggs and 1 cup of milk. Pour this egg mixture over the layered bread and toppings.
  5. Cover the dish and refrigerate overnight for best flavor.
Baking
  1. Preheat the oven to 350°F (175°C).
  2. Bake the French toast bake for about 35-40 minutes, until it’s golden brown. Check for doneness by inserting a knife into the center; it should come out clean.

Notes

Soaking the mixture overnight enhances flavor and texture. Adjust sugar to suit your taste, and gluten-free bread can be used for dietary needs.
