Ingredients

For the Special Sauce
  • ¾ cup mayonnaise Use Greek yogurt for a lighter option.
  • 3 tablespoons ketchup
  • 2 tablespoons yellow mustard
  • 2 tablespoons sweet pickle relish
  • 1 teaspoon white vinegar
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
For the Tacos
  • 1 pound ground beef (80/20) For a healthier option, substitute with ground turkey.
  • 8 small flour tortillas Use gluten-free tortillas if necessary.
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 8 slices American cheese Can substitute with any melting cheese.
  • ¾ cup shredded iceberg lettuce Use freshly shredded for better texture.
  • ½ cup dill pickle chips
  • ¼ cup finely chopped white onion
  • 1 tablespoon neutral oil For grilling in the skillet.

Method

Make the Special Sauce
  1. In a small bowl, whisk together the mayonnaise, ketchup, mustard, pickle relish, vinegar, paprika, garlic powder, and onion powder. Allow it to chill in the refrigerator until you’re ready to assemble your tacos.
Prepare the Tacos
  1. Divide the ground beef into 8 equal portions. Press a thin, even layer of beef onto one side of each tortilla. Season lightly with kosher salt and black pepper.
Cook the Beef
  1. Heat oil in a large skillet over medium-high heat. Carefully place the tortillas beef-side down into the skillet. Cook for about 3–4 minutes until the beef is deeply browned and crispy.
Flip & Add Cheese
  1. Carefully flip the tacos and add a slice of American cheese on top of each one. Cook for an additional 1–2 minutes until the tortilla is lightly golden and the cheese has melted.
Assemble
  1. Remove the tacos from the skillet. Top them generously with shredded lettuce, dill pickle chips, chopped onion, and a drizzle of your special sauce.
Serve
  1. Fold the tacos and serve immediately while they are hot and crispy.
