Ingredients
  

Beef Mixture
  • 1 lb Ground beef Lean ground beef recommended
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 1 packet Taco seasoning Essential for flavor
  • 1 can Diced tomatoes, drained
  • 1 can Diced green chiles
Casserole Base
  • 1 box Cornbread mix Use a boxed mix for convenience
  • 1 cup Milk
  • 2 large Eggs Beaten
Toppings
  • 1 cup Shredded cheese Cheddar or Monterey Jack recommended

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, cook the ground beef, onion, and garlic over medium heat until the beef is browned.
  3. Stir in taco seasoning, diced tomatoes, and green chiles, and let it simmer for a few minutes.
Assembly
  1. Mix the cornbread mix, milk, and eggs in a bowl until smooth and lump-free.
  2. Spread half of the cornbread mixture in a greased 9x13-inch baking dish.
  3. Layer the beef mixture on top, then spread the remaining cornbread mixture over it.
Baking
  1. Bake for 35-40 minutes or until the top is golden brown and a toothpick inserted comes out clean.
  2. For a crispy top, broil for an additional 2-3 minutes, watching closely to prevent burning.

Notes

This casserole can be made vegetarian by swapping ground beef with beans or vegetables. Experiment with spices and toppings to suit your taste.
