Ingredients
  

Chicken Filling
  • 1 rotisserie chicken Rotisserie chicken, meat pulled off the bone Can also use freshly cooked chicken.
  • 1 cup BBQ sauce Sweet or smoky BBQ sauce.
  • 1 cup Corn, canned or frozen Drained if using canned.
  • 1 cup Diced tomatoes, canned Use tomatoes with or without seasoning.
  • 1 cup Cheese, shredded Cheddar or your favorite cheese.
  • 1 each Onion, diced
  • 1 each Bell pepper, diced
  • 1 tablespoon Olive oil For cooking the vegetables.
Cornbread Batter
  • 1 box Jiffy cornbread mix Follow package instructions for preparation.
  • 1 egg Egg As per cornbread mix instructions.
  • 1/3 cup Milk As per cornbread mix instructions.

Method
 

Preparation
  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté the diced onion and bell pepper until soft.
  3. Add BBQ sauce to the skillet and let it simmer for a few minutes.
  4. Stir in corn, diced tomatoes, shredded chicken, and half of the cheese.
Making Cornbread Batter
  1. Prepare the cornbread batter according to package directions, adding jalapeños or cheese if desired.
Layering the Bake
  1. Spread the chicken and vegetable mixture in a baking dish.
  2. Pour the cornbread batter evenly over the top.
  3. Sprinkle the remaining cheese over the cornbread batter.
Baking
  1. Bake in the preheated oven for 35-40 minutes or until cornbread is golden brown.
  2. Let it rest for 5-10 minutes before serving.

Notes

Serve with sides like coleslaw or salad. Allows for variations like adding vegetables or different BBQ sauces.
